When you have extra cheese on hand from a cheese delivery service, and you're not sure you'll be able to use before it goes bad, try making this cheese bread recipe. You make the dough ahead of time and store it in the freezer. Then, whenever you feel like a loaf of cheesy, delicious, homemade bread, you pull out one ball of dough, let it thaw, bake it, and enjoy.
This cheese bread is exceptionally delicious when made with cheddar, havarti, muenster, or colby, but you can really use any cheese you have on hand.
- 12 cups all-purpose flour
- 2 tablespoons sugar
- 4 envelopes active, dry yeast
- 3 teaspoons salt
- 4 cups warm milk (120 degrees F)
- 2 eggs
- 4 cups shredded cheese
Preparing the Dough:
Combine the sugar, yeast, and milk in a mixing bowl. Let stand for 5 minutes, or until the yeast is completely dissolved and the mixture starts to look frothy. Add half of the flour, along with the eggs and salt. Mix until a soft dough forms, and then continue mixing on low for 1 minute.
Slowly add the remaining dough to the bowl, 1 cup at a time, mixing well after each addition. When a firm dough forms, change your mixer attachment over to the dough hook. Knead the dough for 6 minutes. If your mixer does not have a dough hook, you can turn the dough out onto a lightly floured surface and knead it by hand for 10 minutes.
After kneading the dough, add the cheese to the dough, and continue kneading just until the cheese is incorporated.
Place the dough in a greased bowl, and place it in a warm place to rise for about an hour. When the dough is approximately doubled in size (this may take slightly longer than an hour if it's a cooler day), punch it down to remove the air.
Turn the dough out onto a lightly floured surface, and use a sharp knife to cut it into 4 even portions. Wrap each portion in plastic wrap, and place them in the freezer.
Baking the Bread:
When you're ready to make a loaf of your cheese bread, remove a ball of dough from the freezer, and unwrap it. Place it in a bowl on the counter; it will take about 4 - 6 hours to thaw.
When the dough is thawed, gently shape it into a round loaf, and place the loaf on a greased baking pan. Bake the bread for at 375 degrees F for 35 - 40 minutes, or until it appears golden brown on the outside. Let cool, slice, and enjoy.
